Ingredients

- Plain flour, 1 cup
- Cocoa powder, 1/2 cup
- Golden caster sugar, 1 1/2 cups
- Eggs, 2 large
- CrEme fraIche, 3/4 cup
- Melted butter, 1/4 cup
- Baking soda, 1/2 teaspoon, mixed with 1 tablespoon distilled vinegar

METHOD

Begin by preheating your oven to 180°C/356°F (fan-assisted). In a large mixing bowl, combine the creme, eggs, melted butter, golden caster sugar, and a pinch of salt. Stir until the mixture is smooth and well combined. In a small cup, mix the baking soda with 1 tablespoon of distilled vinegar and add it to the wet mixture, allowing it to bubble slightly.
