Summer Superfood Salad
Ingredients
- avocado, 1 ripe, sliced
- cooked beetroot, 1, diced
- cucumber, ⅓, sliced
- black olives, 1 cup
- mixed salad leaves, 4 cups
- feta cheese, 100G, crumbled
- cherry tomatoes, 1 cup, halved
- falafel, 4-5, crumbled
- green jalapeno, 4
- sunflower, pumpkin and other seeds, 2 tablespoons
- olive oil, 2 tablespoons
- lemon dressing or Juice of half a lemon
- Salt and pepper, to taste
METHOD
I. Prepare the Base
Start by arranging the mixed salad leaves in a large salad bowl or platter, creating a fresh and vibrant base for your superfood salad.
II. ADD THE INGREDIENTS
Layer the salad with slices of cucumber, diced cooked beetroot, halved cherry tomatoes, and black olives. These ingredients will add a variety of textures and colours to your salad.
Gently place the avocado slices on top of the salad. Sprinkle the crumbled feta cheese, adding a creamy and tangy element.
Crumble the falafel into bite-sized pieces and scatter them over the salad. The falafel adds a hearty, satisfying texture to the mix.
