Creamy Salmon Pasta
Ingredients
- Spaghetti or your preferred pasta, TO SERVE 2
- Smoked salmon, 3/4 cup, thinly sliced
- Onion, 1 medium, finely chopped
- white wine, 1/2 glass
- CrEme fraIche, 3/4 cup
- Freshly chopped herbs (parsley or dill recommended), 1 tablespoon
- Black pepper
METHOD
Begin by bringing a large pot of salted water to the boil. Add the spaghetti and cook, following the packet instructions. Once cooked, drain the pasta and set it aside, reserving a little of the cooking water.
Meanwhile, in a large frying pan, gently fry the finely chopped onion over medium heat until it becomes soft and translucent. Pour in the white wine and allow it to simmer until slightly reduced, adding a subtle depth of flavour. Stir in the smoked salmon and creme fraiche, letting the mixture warm through gently without boiling. Season with herbs to taste.
Add the cooked pasta to the pan, tossing everything together until the spaghetti is beautifully coated in the creamy sauce. If needed, add a splash of the reserved pasta water to loosen the sauce.
