Cheesy Cutlets
Ingredients
- 500g minced turkey or preferred minced meat
- 1 egg
- 1 tsp Dijon mustard
- Salt and pepper, to taste
- A small handful of finely chopped green onion or parsley
- Cubes of cheddar or preferred cheese
- breadcrumbs or flour, for coating
- A few sprigs of rosemary (optional, for pan)

In a large bowl, mix the minced meat, egg, Dijon mustard, salt, pepper, and the chopped herbs. Avoid overmixing, just until combined.
Flatten a spoonful of the mixture in your hand, place a cube of cheese in the centre, then gently shape it into a ball and flatten slightly. Roll the cutlet in breadcrumbs or flour to coat.
